From the time I was eight years old, the kitchen was my playground, and cooking became my love language. Growing up immersed in my Indian culture, I found myself captivated by the rich aromas, bold flavors, and deep traditions woven into our food. I mastered everything from comforting curries to crispy samosas and perfectly spiced kebabs. But what truly set my heart on fire was learning the delicate art of blending spices—transforming simple ingredients into dishes that told a story, dishes that brought people together.

Hi, I’m Bali Mendels. Punjabi born and raised in England, I moved to the United States at 19. It didn’t take long for me to realize that Indian food here was different. What I found in restaurants often lacked the depth, warmth, and authenticity I had grown up with. The flavors were too sweet, too watered down, missing that perfect balance that makes Indian food so special. So, I avoided eating out at Indian restaurants, always longing for the bold, rich flavors of home.

I knew I could cook authentic curries from scratch, but sometimes, life gets busy, and I wanted a shortcut, something convenient yet truly authentic. I turned to grocery store curry sauces, hoping for a decent substitute, only to find them lacking in flavor, packed with preservatives, or filled with allergens. That’s when it hit me, there was no truly authentic Punjabi curry sauce on the market made with fresh, all-natural ingredients.

So, I did something about it.
I started selling 32oz jars of my homemade curry sauce out of a cooler at the Dallas Farmer’s Market. And the response? Overwhelming. Every time, I sold out. I knew I had created something special. But getting my sauce to the shelves wasn’t easy.

At 43, after years of persistence, I finally made it happen. I fought to keep my sauce clean—no chemicals, no preservatives—just real ingredients, as they should be. Many manufacturers told me it couldn’t be done. Some even spoke down to me, raising prices, doubting my vision, telling me that even an Indian chef from India couldn’t pass this sauce without preservatives. But they underestimated me. If there’s one thing you should know about me, I don’t back down easily.

So, I took matters into my own hands. I pushed through every challenge and refused to compromise. Today, I am beyond proud to say that Curry Girl is the first truly authentic Punjabi curry sauce in a jar, made with zero preservatives, gluten-free, dairy-free, nut-free, soy-free, sugar-free, and seed oil-free—just pure, concentrated flavor in every spoonful.

Did you know that Punjabi curry is known as one of the best Indian curries? It’s earthy, deeply aromatic, and perfectly balanced, never overpowering, never watered down. And because we cook in large batches, my concentrated sauce can easily feed 10-15 people when used correctly. No more tiny, diluted jars that barely serve two!
